COSTRAS DE QUESO
A relatively new dish, it appeared in Mexico City in the 1990s, giving a new shape to all the classic recipes of Mexican cuisine. A sort of semi-crunchy cheese tortilla is prepared by mixing Monterey jack and provolone cheeses and filling it with a variety of ingredients served with refried beans, chilli, garlic, onion, coriander and macha sauce.

Wheat flour tortillas originate from the north of the country, specifically Chihuahua and Sonora, as well as Tijuana at some point near the revolution, tortillas were mixed with local cheese production, hence their name. Today, the variety is endless and quesadillas are served with monterey jack cheese, beans, cream, escabeche, vinaigrette and macha salsa.
